The pancake has a very long history and featured in cookbooks as far back as 1439. Possibly because they're so easy to make, pancakes are enjoyed all over the world. And each country seems to have its own take…
Old English Pancake batter was mixed with ale.
German and French Pancakes, leavened by eggs and much beating, are baked very thin and served with sweet or savoury fillings.
The French Crêpe is thin and crispy, and a crêpe suzette is actually folded or rolled and heated in a sauce of butter, sugar, citrus juice, and liqueur.
Russian Blinis, usually prepared with buckwheat, are thin, crisp pancakes - commonly served with caviar and sour cream or folded over and filled with cream cheese or jam.
Mexico has its tortilla, which is often served folded over a bean or meat filling and topped by tomato sauce.
American Pancakes are thicker, and sometimes called battercakes, griddlecakes, or flapjacks. They're usually leavened with baking powder or baking soda and served with syrup.
As a Scotsman, Abram Lyle would have most likely eaten Scotch Pancakes, or Drop Scones as they are sometimes known.

Crème Fraiche Drizzle Lyle's Golden Syrup over your pancakes and top with a dollop of crème fraiche. Delicious served with fruit salad.
Chunky Apple Sauce Simply heat 1 jar of chunky or smooth apple sauce and spoon between layers of pancakes (Scotch Pancakes are best), stacking four or five pancakes high. Drizzle a tablespoon of Lyle's Golden Syrup over each tower.
Grand Marnier Mix together 3-4 tablespoons of Grand Marnier (or brandy), 1 tablespoon of Lyle's Golden Syrup and 3 egg yolks and whisk over a pan of simmering water until a light thick creamy consistency is reached and spoon over your warm pancakes. For a zesty finish, orange segments can be cut into small pieces adding them to the mixture just before serving.
Lemon Chantilly Cream Mix together 150ml double cream, 1 tablespoon Lyle's Golden Syrup, a splash of vanilla essence and juice of 1 lemon, until soft and creamy, and spoon on top of your pancakes.
Goldie Oldie You can't beat a warm stack of freshly made deep-pan pancakes, drizzled with a generous helping of Lyle's Golden Syrup and topped with a knob of butter or a heaped scoopful of vanilla ice cream. Try with Lyle's Golden Syrup Maple Flavour for something a little bit different.
